Frozen Yogurt Granola Cups

Have you ever wanted to take yogurt on the go? Try out these yogurt cups in your next meal prep for an easy breakfast, snack, or dessert. They can be fruity or fudgy with endless combinations of your allowed (and favorite) ingredients!

  1. Step 1

    Prepare a muffin tin with 12 parchment paper or silicone muffin liners.

  2. Step 2

    In a medium mixing bowl, add oats, flaxseed, cinnamon, and salt, stirring to combine.

  3. Step 3

    Melt the coconut oil in a microwavable bowl, then stir in the peanut butter, honey, and vanilla until smooth.

  4. Step 4

    Pour the wet ingredients into the dry ingredients and stir to combine.

  5. Step 5

    Fill the bottoms of the muffin liners with about 1/4 - 1/2 inch of granola batter and put the muffin tray in the freezer for 10 minutes.

  6. Step 6

    Pull out the muffin tray and add a large spoonful or two of yogurt to each muffin cup, smoothing down to keep the cup lower or at equal height to the top of the muffin liner. 

  7. Step 7

    Add your toppings and place the muffin tin back in the freezer for at least 1.5 hours or until firm enough to remove from the liner and eat with your hands! 

    For storage, move the muffin cups to a plastic bag once they are firm to avoid freezer burn. The cups will last in the freezer up to a month.
